John Dory (Zeus faber) is a prized saltwater fish found in UK and Mediterranean coastal waters, living near the seabed up to 200m deep. It has a flat, oval body, olive-yellow skin, and a dark side spot known as “St. Peter’s thumbprint.” Its flesh is firm, white, and sweet, ideal for grilling, pan-frying, or roasting.
