A smaller variety of Ray in today from Shetland Market.

This is the Flowery Ray up in these parts and known as the Cuckoo Ray in Cornwall where it is also landed.

These are mature now. Live about 5 years and hatch upto 150 little rays!

If you enjoy the meaty texture of a Ray this is the variety to go for. The others are getting rarer and rarer and some are quite endangered. These are plentiful and delish!

Day 1 of the #SeafoodExpoGlobal trip. Visited the harbour in #Cabrils, checked out the local day boat fleet where they land a great deal that is familiar to us and a whole lot of species we can't get at all. Some of the prawn species were completely alien to UK markets and were truly fascinating. I am going to be eating them for lunch tomorrow in #Reus and will report back. Managed to catch up with a chef I previously worked with, Amigo Mia, @MarcosGarciachef. He worked in my kitchen 25 years ago as a young chef who left home for the first time. His travels after Edinburgh took him around the world before returning to Spain to take over a kitchen in Barcelona. I will share that experience later in the week also. Very excited for the week ahead at the conference where I get to meet many of our suppliers from UK and wider European markets.

Catch of the day is this 20kg Monkfish from the west of Shetland. Could fit your whole body through that mouth and not touch the sides.
After the hard winter that seems to have lasted for about 9 months, our local day boat fleet is looking forward to more days like this. This harbour wall is loaded with creels still covered with baked-on little barnacles that will soon get jet washed off and put back to the Firth of Forth where they will stay until end of the year. Lobsters and Crabs have had a good break from fishing, thanks to the rough weather the past couple of months.
